The main goal of this article is to build a gastronomic itinerary through Guimarães Rosa's backlands analyzing some fragments of his novel The Devil to Pay in the Backlands (1956), taking as a starting point codes, so to speak, related to the food and commensality at the author's narrative in order to perceive their symbolic value observing how food practices were used by Rosa, both for the construction of the romanesque framework and for the constitution of the social process and the figure of the jagunço. We believe that the abundant references to food, preparation, cooking utensils and commensal rites act as what we would call a "trigger" of memory in Riobaldo's narrative since – in addition to acting as a sort of intratextual memory medium in the novel (because it triggers memories) – it also acts as a medium of collective memory.
