The present work analyses some psychosocial and physiological aspects of the elderly, indicating that this population must be seen as a specific consumer market although there has been a signif cant population increase of this age group in Brazil and in the world, the elderly are still discriminated as a consumer market. The paper shows that the food products available in the market must be adequate to the nutritional specificity of the elderly, explaining some characteristics of their nutritional and physiological status to which it should correspond and support.References
